The unique microclimatic in Palai, Faedo the area where this wine is born, is considered among the most representative in the production of Müller Thurgau wine in Italy. In order to preserve the delicate varietal characteristics (aroma and natural antioxidants) the grapes are processed in hyper-reduction (without oxygen) technique developed and patented by the winery. Vines planted at heights of up to 750 metres at a place called Palai in the commune of Faedo. The cool Alpine mountain environment naturally retards ripening and accounts for the wealth of aromas that can rival those of Riesling. Pojer & Sandri Muller-Thurgau on release has a brilliant straw yellow colour with greenish highlights and ample aroma with scents of apricots, peaches, lemons and mountain herbs. Bright and clean in flavour, the aromatic fruit and mineral sensations are buoyed by lively acidity that leaves the palate thoroughly refreshed. With time it will acquire the elegance of a fine Riesling or Chablis. Pairs well with seafood dishes, also simple cooking of freshwater fish stew and other dishes especially those flavoured with butter and sage
